Sweet Summertime Salad
{serves 4-6}

3 cups quinoa {cooked}
4 cups watermelon {cubed}
1 cucumber {cubed}
8 oz. feta cheese {cubed}
1 cup fresh basil {packed}
juice from 2 lemons
1/2 cup olive oil

Combine quinoa, watermelon, feta + cucumbers in a bowl.

In a food processor, process basil, lemon juice + olive oil until well combined. Toss with quinoa. Cover + chill for 20 minutes to allow flavors to combine.

      Hi Nancy! We’d recommend 1-2 Tbsp. of chives or green onions if you’re looking to add a little zip to the existing recipe!

    Although the images are lovely, I did not find this salad appetizing at all. The combination of cucumber and watermelon sprang so much water that it became a soggy mess. The quinoa should be used more as a garnish (as pictured) instead of mixed in.


    The recipe of this watermelon sounds really good. I will pass this recipe on to our daughter Nettie to see what she can do with this. I’m sure we will enjoy its’ refreshing on a hot afternoon and evening. I will let you all know what we experience in the very near future.

    Best tasting quinoa is Roland garden vegetable it has a grilled flavorful taste to it and its also certified whole grain.

    I haven’t ever eaten a watermelon and cucumber salad but i do buy quinoa and i just love it in fact i just found out where to buy a box of it instead of just a pack of it to fix in the microwave and I Love The Stuff !!! I’m going to make some Monday evening to eat with my chicken Oh and it’s real good with Basil and Olive Oil Love Love Love Love It !!!!!
