BRUSCHETTA COUSCOUS
{serves 2-4}

3 cups cooked Israeli couscous
1 cup diced green olives
6-8 garlic cloves {roasted + diced}
2 tomatoes {diced}
8-10 oz. fresh mozzarella {cubed}
juice from 1 lemon
½ cup extra virgin olive oil
4-5 fresh thyme sprigs {chopped}
salt + pepper to taste

In a medium mixing bowl, combine couscous, olives, garlic, tomatoes + mozzarella. Set aside. In small mixing bowl, combine lemon juice, olive oil, thyme, salt + pepper with a fork or whisk. Toss with couscous mixture.

Cover and refrigerate for 30-60 minutes. Serve cool.
