In celebration of football madness, every Saturday leading up to the February 2nd showdown we’ll be featuring a tasty recipe or two to get you prepared. Today, it’s yummy BBQ meatballs and walnut meat{less}balls. Enjoy!

Root Beer BBQ Turkey Meatballs
{Makes appox. 25 meatballs}

1 lb. Ground Turkey
2 Garlic Cloves, minced
1/4 cup Onion, finely chopped
1/2 Tbs. Paprika
1 egg, beaten
1/2 cup dry breadcrumbs
1/2 tsp. Salt
1/2 tsp. Pepper

Mix all the ingredients and shape into 1 inch meatballs.
Heat olive oil in a pan and cook the meatballs for 5-6 minutes until browned. Place on a greased baking sheet and bake at 350 degrees until cooked through, about 15 minutes.

Root Beer BBQ

1 Shallot (finely chopped)
2 Tbs. fresh Ginger (finely grated)
2 Garlic Cloves (finely chopped)
2 cups good-quality Root Beer
2 cups Ketchup
1/4 cup light Brown Sugar
2 Tbs. Molasses

Heat olive oil in a saucepan over medium heat, add the shallots and cook until soft. Add the ginger and garlic and cook for 1 minute. Stir in the root beer and cook until reduced by half. Add the ketchup, brown sugar and molasses and cook over low heat until the sauce reduces, stirring occasionally, about 30 minutes.

Toss meatballs to coat. Serve with jalapeño slices and cubed peaches.

{Makes approx. 20 meatballs}

2 cups Walnuts
1 1/2 cups Garbanzo Beans
1/2 cup Breadcrumbs
2 Tbs. Olive Oil
2 Tbs. Apple Cider
1 Tbs. Smoked Paprika
1 Tsp. Hot Pepper Flakes
2 Eggs

Mix all except for the egg in a food processor until well chopped. Stir egg into mixture and form into 1 inch balls. Heat an additional 1 Tbs. olive oil in a pan and cook for 7-10 minutes until brown on all sides.

Lemon Garlic Aioli

1 cup Mayo
Zest of 1 Lemon
2 Tbs. Lemon Juice
1 Garlic Clove (minced)

Stir all ingredients together.

Serve meatballs with lemon garlic aioli, guacamole, and diced tomato
