We give you cake…in a jar! Poppy seed pound cake with blackberry compote + lemon mascarpone artfully layered in charming jam jars. The presentation is looks bridal {and baby!} shower Pinterest board perfect, but the layered construction requires anything but perfection. Don’t be afraid to get a little messy while putting these together – it’s half the fun!

POPPY SEED POUND CAKE

1 1/2 cups flour
1/2 Tsp. baking powder
1/8 Tsp. kosher salt
1 1/4 cups sugar
1/2 cup butter, softened
3 medium eggs
1/2 Tsp. vanilla
1/2 cup milk
1/4 cup poppy seeds

Heat oven to 350 degrees.  Line 9×13 cake pan with parchment paper and spray with cooking spray.

Combine flour, baking powder + salt in a bowl. Set aside.  Cream sugar + butter.  Add the eggs + vanilla, mixing on low speed until combined.  Turn the speed to high + whip for about 5 minutes. Add the flour mixture + the milk alternately to the butter mixture. Beat on low speed after each addition, until smooth, starting and ending with the flour. Fold in the poppy seeds until they are well incorporated.

Pour batter in pan + bake for about 50 minutes, until a toothpick comes out clean.

LEMON MASCARPONE

1 lb. mascarpone cheese
1/2 cup powdered sugar
Juice from 1 lemon
Zest from 1/2 lemon

Whip all ingredients on high until smooth.

BLACKBERRY COMPOTE

1/2 cup water
1/4 cup sugar
1 1/2 Tbsp. fresh lemon juice
3 cups fresh or frozen blackberries

Bring water, sugar + juice to a boil in a small saucepan over moderate heat, stirring until sugar is dissolved. Boil until reduced to about 1/4 cup. Cool syrup.

Purée syrup with blackberries in a blender.

Cut cake into 1/2 inch cubes. Create first layer by placing cake cubes in bottom of a small bowl or glass. Spread mascarpone over cake layer. Top with compote. Repeat until container is filled.
