It’s that time of year. Summer’s finest produce is at its greatest. Yep. We’re talkin’ about tomatoes. Deeeelish.

Mix it up and make ‘em your own by stuffing them plump full of herbs + vegetables. This herb hummus stuffed tomatoes recipe is truly a perfect last-minute snack or app for when your neighbors drop by or when running out to a summer party. {serves 4-6}

8 oz. chickpeas
1 garlic clove
1 cup basil
½ Tbsp. oregano
¼ cup lemon juice
4 Tbsp. Tahini
1 Tbsp. olive oil
4 oz. crumbled feta
10 – 14 small tomatoes

Blend all ingredients, except feta + tomatoes, with a food processor until smooth. Stir in feta. Set aside.

Slice off tops of tomatoes + scoop insides out using a small spoon. Slice off a small piece of the bottom {so they stand upright.} Fill with mixture. Refrigerate until ready to serve.
