BLACKBERRY WATERMELON MOJITOS
{serves 1}

5 blackberries
6 mint leaves
1 fl. oz. watermelon puree
1 fl. oz. simple syrup
3 fl. oz. light rum
2 fl. oz. soda water

Simple Syrup ::
Bring 1 cup sugar + 1 cup water to a boil. Simmer until sugar is dissolved. Cool completely.

Watermelon Puree ::
Slice seedless watermelon into cubes. Puree in blender.

Place blackberries + mint into a sturdy glass. Using a muddler, muddle blackberries + mint until broken and crushed. Add watermelon puree, simple syrup + rum. Stir until well combined. Fill remainder of glass with soda water. Enjoy!
